Almond Oat Chocolate Chip Muffins

These gluten & dairy free muffins are quick, delicious and just the right amount of sweet!

Ingredients

  • 1 cup rolled oats

  • 1/4 cup almond flour

  • 1/4 tsp baking soda

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 2 tsp coconut oil, melted

  • 2 eggs

  • 1/4 cup maple syrup

  • 1/4 cup almond butter

  • 1/2 tsp maple syrup

  • 1/2 cup dark chocolate chips


Directions

  1. Preheat oven to 350F

  2. Using coconut oil lightly grease 8 holes in your muffin tin

  3. In a large bowl combine oats, almond flour, baking soda, baking powder & sea salt

  4. In a small bowl mix coconut oil, eggs, maple syrup, almond butter & vanilla

  5. Pour wet ingredients into dry ingredients and mix until combine, stir in the chocolate chips

  6. Scoop the mixture into your muffins tin and bake 25 mins

  7. Enjoy!
