Banana Pancakes


Ingredients

  • 2 eggs

  • 1 banana

  • 1/4 cup oats

  • 1/4 tsp vanilla extract

  • 1/4 tsp cinnamon

  • 1/4 tsp baking powder

  • pinch of salt

  • coconut oil, to cook

Directions

  1. In a bowl mash the banana then stir in the egg whisking with a fork

  2. Add the remaining ingredients (except coconut oil) and stir well

  3. Heat 1 tsp coconut oil in a non-stick pan, add batter making small pancakes (about the size of your palm)

  4. Cook 3-5 mins per side or until brown

  5. ENJOY!

Notes

  • Add-ins: mix in fresh berries or chocolate chips

  • Toppings: this recipe is great with berries + coconut whip, or with peanut butter + strawberries
