Ingredients
2 eggs
1 banana
1/4 cup oats
1/4 tsp vanilla extract
1/4 tsp cinnamon
1/4 tsp baking powder
pinch of salt
coconut oil, to cook
Directions
In a bowl mash the banana then stir in the egg whisking with a fork
Add the remaining ingredients (except coconut oil) and stir well
Heat 1 tsp coconut oil in a non-stick pan, add batter making small pancakes (about the size of your palm)
Cook 3-5 mins per side or until brown
ENJOY!
Notes
Add-ins: mix in fresh berries or chocolate chips
Toppings: this recipe is great with berries + coconut whip, or with peanut butter + strawberries
